Beef brisket comes from the breast section, found under the first five ribs. It's perfect for a long, slow cook: give it a good sear, then braise until meltingly tender. It's also delicious second day around when the flavours have had even more time to develop. As with all our free-range Hereford and Angus beef, the meat is hung for 28 days to get the most flavour, and our master butcher will prepare your brisket, beautifully rolled, strung and ready for cooking.
